Ingredients

  • 4 cups Fresh watermelon (seedless or seeds removed)
  • 1 cup Granulated sugar
  • 2 tablespoons Lemon juice
  • 2 tablespoons Powdered unflavored gelatin
  • 0.25 cup Water

Directions

Step 1

Cut the watermelon into chunks and remove any seeds if necessary.

Step 2

Blend the watermelon chunks in a blender until smooth, then strain the juice through a fine-mesh sieve into a bowl to remove pulp. You should have approximately 4 cups of watermelon juice.

Step 3

In a medium saucepan, combine the watermelon juice, granulated sugar, and lemon juice. Heat over medium heat, stirring occasionally, until the sugar is completely dissolved. Do not boil.

Step 4

In a small bowl, combine the powdered gelatin with 1/4 cup of water. Let it sit for 5 minutes to bloom.

Step 5

Add the bloomed gelatin to the warm watermelon mixture in the saucepan. Stir continuously until the gelatin is fully dissolved.

Step 6

Remove the saucepan from heat and let the mixture cool slightly, about 5-10 minutes.

Step 7

Pour the jelly mixture into clean jars or containers. Allow it to come to room temperature, then cover and refrigerate for at least 4 hours or until set.

Step 8

Serve the watermelon jelly on toast, biscuits, or as a sweet topping for desserts.
