Ingredients

  • 1 cup canned black beans (drained and rinsed)
  • 0.5 cup rolled oats
  • 0.5 cup breadcrumbs
  • 1 medium carrot (grated)
  • 0.5 medium onion (finely diced)
  • 1 clove garlic (minced)
  • 1 tablespoon soy sauce
  • 1 teaspoon ground cumin
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons olive oil

Directions

Step 1

In a large mixing bowl, mash the black beans with a fork or potato masher until mostly smooth but with some texture remaining.

Step 2

Add the grated carrot, diced onion, minced garlic, soy sauce, ground cumin, smoked paprika, salt, and black pepper. Mix well to combine.

Step 3

Stir in the rolled oats and breadcrumbs until the mixture comes together and can be easily formed into patties. If the mixture is too wet, add more breadcrumbs, one tablespoon at a time.

Step 4

Divide the mixture into four equal portions and shape them into burger patties about 1/2-inch thick.

Step 5

Heat the olive oil in a large skillet over medium heat.

Step 6

Cook the patties in the skillet for about 6-8 minutes on each side, or until they are golden brown and firm to the touch.

Step 7

Serve the veggie burgers on buns with your favorite toppings such as lettuce, tomato, onion, avocado, or condiments like ketchup and mustard.

Step 8

Enjoy your easy and delicious homemade veggie burgers!
