  • 3 cups canned black beans, drained and rinsed
  • 4 cups vegetable broth
  • 1 14-ounce can canned diced tomatoes
  • 1 bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon lime juice
  • 2 tablespoons fresh cilantro, chopped (optional for garnish)
  • 0 avocado slices (optional for topping)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Add the chopped onion and sauté for 3-4 minutes, or until the onion becomes translucent.
