  • 4 pieces boneless, skinless chicken breasts

  • 4 cloves garlic cloves, minced
  • 1 cup sun-dried tomatoes, julienned

  • 1 cup chicken broth
  • 3 cups baby spinach
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper

Directions

Step 1

Season the chicken breasts on both sides with salt, pepper, and half of the Italian seasoning.

Step 2

Heat the olive oil in a large skillet over medium heat. Cook the chicken breasts for 5-7 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
