Ingredients

  • 14 oz Turkey sausage (mild or spicy)
  • 3 cups Broccoli florets
  • 12 oz Pasta (penne, rigatoni, or your choice)
  • 2 tbsp Olive oil
  • 3 units Garlic cloves, minced
  • 0.5 tsp Crushed red pepper flakes (optional)
  • 0.5 cups Grated Parmesan cheese
  • 0.5 tsp Salt
  • 0.5 tsp Black pepper
  • 1 cups Pasta cooking water

Directions

Step 1

Bring a large pot of salted water to a boil and cook the pasta according to the package instructions until al dente. Reserve 1 cup of pasta cooking water and drain the remaining water.

Step 2

While the pasta cooks, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the turkey sausage (remove casings if using links) and cook, breaking it into small pieces, until browned and fully cooked, about 6-8 minutes. Transfer the cooked sausage to a plate and set aside.

Step 3

In the same skillet, add another tablespoon of olive oil and the minced garlic. Sauté for 1-2 minutes until fragrant.

Step 4

Add the broccoli florets to the skillet along with 1/3 cup of water or reserved pasta cooking water. Cover and steam for 4-5 minutes, stirring occasionally, until the broccoli is tender but still bright green.

Step 5

Return the cooked turkey sausage to the skillet and stir to combine with the broccoli. Add the crushed red pepper flakes (if using), salt, and black pepper.

Step 6

Add the cooked pasta to the skillet and toss everything together. Gradually add reserved pasta water, a few tablespoons at a time, to loosen the sauce and help coat the pasta evenly.

Step 7

Remove the skillet from heat and stir in the grated Parmesan cheese. Adjust seasoning with additional salt and pepper, if needed.

Step 8
