Ingredients

  • 1 lb Ground turkey
  • 1 medium Yellow onion, diced
  • 2 Garlic cloves, minced
  • 2 cups Frozen mixed vegetables (peas, carrots, corn, and green beans)
  • 2 tbsp Tomato paste
  • 1 cup Chicken broth
  • 2 tsp Worcestershire sauce
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Butter
  • 4 medium Russet potatoes, peeled and cubed
  • 0.5 cup Milk
  • 0.5 cup Shredded cheddar cheese
  • 0.25 tsp Paprika (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Place the peeled and cubed potatoes in a large pot of salted water. Bring to a boil and cook until tender, about 15-20 minutes.

Step 3

While the potatoes are cooking, heat a large skillet over medium-high heat. Add the ground turkey and cook until browned, breaking it apart with a wooden spoon. Drain any excess fat if necessary.

Step 4

Add the diced onion and minced garlic to the skillet with the turkey. Sauté for 2-3 minutes until the onion becomes translucent.

Step 5

Stir in the tomato paste, chicken broth, Worcestershire sauce, salt, and black pepper. Mix well and let it simmer for 3-4 minutes until the mixture thickens slightly.

Step 6

Add the frozen mixed vegetables to the skillet and cook for another 2-3 minutes. Remove the skillet from heat and set aside.

Step 7

Once the potatoes are tender, drain them and return to the pot. Add butter, milk, and shredded cheddar cheese to the potatoes. Mash until smooth and creamy.

Step 8

Transfer the turkey and vegetable mixture to a 9x13-inch casserole dish, spreading it out evenly.

Step 9

Spoon the mashed potatoes over the turkey mixture, spreading them out to fully cover the top. Use a fork to create decorative ridges, if desired.

Step 10

Optional: Sprinkle paprika over the mashed potatoes for added color and flavor.

Step 11

Bake the casserole in the preheated oven for 20-25 minutes, or until the potato topping is lightly golden and the filling is bubbling around the edges.

Step 12

Remove from the oven and let cool for 5 minutes before serving. Enjoy!
