Ingredients

  • 200 grams semisweet chocolate chips
  • 120 ml heavy cream
  • 15 grams unsalted butter
  • 30 grams unsweetened cocoa powder or powdered sugar (for coating)

Directions

Step 1

Place the semisweet chocolate chips in a heatproof mixing bowl.

Step 2

In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Do not let it boil.

Step 3

Remove the saucepan from heat and pour the hot cream over the chocolate chips.

Step 4

Let the mixture sit undisturbed for 2-3 minutes to allow the chocolate to melt.

Step 5

Add the unsalted butter to the mixture, then gently stir until smooth and glossy. This is your ganache base.

Step 6

Cover the bowl with plastic wrap and refrigerate for 1-2 hours, or until the ganache is firm enough to scoop.

Using a small spoon or melon baller, scoop out portions of the chilled ganache and roll them into bite-sized balls using your hands. If the ganache becomes too soft, return it to the fridge to firm up.
