Ingredients

  • 2 pounds Fresh tomatoes (preferably ripe Roma or cherry tomatoes)
  • 3 tablespoons Olive oil
  • 3 pieces Garlic cloves, minced
  • 1 medium Onion, finely chopped
  • 1 teaspoon Sugar (optional, to balance acidity)
  • 1 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 6 pieces Fresh basil leaves, roughly torn
  • 0.5 teaspoon Dried oregano
  • 0.25 cup Water or vegetable broth

Directions

Step 1

1. Wash the tomatoes thoroughly and cut them into quarters (or halves if using cherry tomatoes). There is no need to peel the skins.

Step 2

2. Heat a large saucepan over medium heat and add olive oil. Once hot, add the chopped onion and sauté for 3-4 minutes until softened.

Step 3

3. Add the minced garlic and cook for an additional 1 minute until fragrant, being careful not to burn it.

Step 4

4. Add the quartered tomatoes to the pan, along with the water or vegetable broth. Stir to combine.

Step 5

5. Season with salt, black pepper, dried oregano, and sugar (if using). Stir well and bring the mixture to a gentle simmer.

Step 6

6. Cover the pan with a lid and let the tomatoes cook on low to medium heat for about 20 minutes, stirring occasionally. The tomatoes will start to soften and release their juices.

Step 7

7. After 20 minutes, use an immersion blender directly in the pan to puree the tomato mixture until smooth. (Alternatively, you can carefully transfer the mixture to a blender, puree, and return it to the pan.)

Step 8

8. Taste the sauce and adjust the seasoning as needed. If the sauce is too thick, add a little more water or broth to reach your desired consistency.

Step 9

9. Stir in the torn fresh basil leaves and let the sauce simmer uncovered for another 5 minutes for the flavors to meld.

Step 10

10. Serve the tomato sauce over your favorite pasta, use it as a pizza base, or store it in an airtight container in the fridge for up to 5 days.
