Ingredients

  • 1 cup short-grain white rice
  • 2 cups water
  • 4 cups whole milk
  • 0.5 cup granulated sugar
  • 2 tablespoons unsalted butter
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon salt
  • 0.5 cup raisins (optional)

Directions

Step 1

Rinse the rice under cold water until the water runs clear to remove excess starch.

Step 2

In a medium saucepan, bring the water to a boil over medium-high heat.

Step 3

Add the rinsed rice to the boiling water. Reduce the heat to low, cover with a lid, and let simmer for 10 minutes or until the water is mostly absorbed.

Step 4

Stir in the whole milk, granulated sugar, butter, cinnamon, and salt. Increase the heat to medium-low and cook, stirring occasionally to prevent sticking, for about 25–30 minutes or until the mixture thickens and the rice is tender.

Step 5

Once the pudding reaches your desired thickness, stir in the vanilla extract and raisins, if using.

Step 6

Remove the saucepan from the heat and let the pudding cool slightly. The pudding will continue to thicken as it cools.

Step 7

Serve the rice pudding warm or chilled. Garnish with a sprinkle of cinnamon on top, if desired.
