Ingredients

  • 500 g Beef or chicken (boneless, skinless)
  • 200 ml Coconut milk
  • 2 tablespoons Soy sauce
  • 1 tablespoon Fish sauce
  • 1 tablespoon Brown sugar
  • 1 teaspoon Ground coriander
  • 1 teaspoon Ground turmeric
  • 2 cloves Garlic (minced)
  • 1 teaspoon Ginger (grated)
  • 1 tablespoon Lime juice
  • 0.5 teaspoon Chili flakes (optional)
  • 4 tablespoons Peanut butter
  • 1 tablespoon Rice vinegar
  • 2 tablespoons Hot water
  • 10 Wooden skewers (soaked in water for 30 minutes)

Directions

Step 1

Slice the beef or chicken into thin strips, about 1-inch wide.

Step 2

In a large mixing bowl, combine coconut milk, soy sauce, fish sauce, brown sugar, coriander, turmeric, minced garlic, grated ginger, lime juice, and chili flakes (if using). Mix well to create the marinade.

Step 3

Add the beef or chicken strips to the marinade, ensuring all pieces are well coated. Cover the bowl and let it marinate in the refrigerator for at least 1 hour (or up to overnight for more flavor).

Step 4

Preheat a grill or grill pan over medium-high heat.

Step 5

Thread the marinated beef or chicken onto the soaked wooden skewers, leaving a small gap at the end for handling.

Step 6

Grill the skewers for 3-5 minutes per side, or until the meat is fully cooked and slightly charred.

Step 7

While the skewers are grilling, prepare the peanut dipping sauce. In a small bowl, mix peanut butter, rice vinegar, hot water, and a pinch of soy sauce (if desired) until smooth. Add more hot water as needed to reach your preferred consistency.

Step 8

Serve the satay skewers warm with the peanut dipping sauce on the side. Garnish with lime wedges or chopped peanuts, if desired.
