Ingredients

  • 1 cup Jasmine rice
  • 1.5 cups Water
  • 1 cup Coconut milk

  • 3 cloves Garlic (minced)
  • 1 teaspoon Fresh ginger (grated)
  • 2 tablespoons Red curry paste
  • 1.5 tablespoons Fish sauce
  • 2 tablespoons Lime juice
  • 1 teaspoon Brown sugar
  • 2 stalks Green onions (thinly sliced)
  • 2 tablespoons Fresh cilantro (chopped)
  • 0.5 teaspoon Salt

Directions

Step 1

Rinse the jasmine rice under cold water until the water runs clear.

Step 2

In a medium saucepan, combine 1 cup of jasmine rice and 1.5 cups of water. Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit covered for an additional 5 minutes. Fluff with a fork before serving.

In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium heat.
