Ingredients

  • 200 grams Ground almonds (almond flour)
  • 150 grams Granulated sugar
  • 2 large Egg whites
  • 0.5 teaspoons Almond extract
  • 0.5 teaspoons Vanilla extract
  • 3 tablespoons Powdered sugar (for dusting)

Directions

Step 1

Preheat your oven to 170°C (340°F) and line a baking sheet with parchment paper.

Step 2

In a medium mixing bowl, combine the ground almonds and granulated sugar. Mix well to evenly distribute the sugar.

Step 3

In a separate bowl, whisk the egg whites until they are frothy and soft peaks begin to form. Be careful not to over-whisk.

Step 4

Gently fold the frothy egg whites into the almond and sugar mixture. Add the almond extract and vanilla extract, folding just until the dough comes together into a sticky paste.

Using your hands or a teaspoon, scoop out small portions of dough (about 1 tablespoon each) and roll into smooth balls.

Place each ball on the lined baking sheet, spacing them about 1 inch apart to allow for slight spreading during baking.
