Preheat your oven to 375°F (190°C).
Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
Add the baby spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
In a mixing bowl, combine the cooked spinach, cream cheese, Parmesan cheese, and half of the salt and black pepper. Mix thoroughly to create the stuffing.
Place each turkey cutlet on a flat surface and pound gently with a meat mallet to an even thickness of about 1/4 inch.
Spoon a portion of the spinach mixture onto one end of each cutlet. Roll each cutlet tightly around the stuffing and secure with 1-2 toothpicks.
