  • 0.33 cup All-purpose flour
  • 2 tablespoons Vegetable oil
  • 2 tablespoons Unsalted butter
  • 2 large Yellow onion (thinly sliced)
  • 4 cloves Garlic (minced)
  • 8 ounces Mushrooms (sliced)
  • 3 cups Beef broth
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon Fresh thyme (leaves only)
  • 2 pieces Bay leaves
  • 0.33 cup Heavy cream
  • 2 tablespoons Chopped fresh parsley (for garnish)

Directions

Step 1

Season the beef, moose, and venison with 1 teaspoon of salt and 1/2 teaspoon of black pepper. Toss the seasoned meat with all-purpose flour until evenly coated.

Step 2

Heat vegetable oil over medium-high heat in a large heavy-bottomed skillet or Dutch oven. Sear the meat in batches until browned on all sides, about 2-3 minutes per side. Transfer the browned meat to a plate and set aside.

Step 3

Reduce the heat to medium and add unsalted butter to the skillet. Once melted, add the sliced onions and cook for 5-7 minutes, stirring occasionally, until softened and golden brown.

Remove the bay leaves and discard. Garnish with fresh parsley before serving.
