Ingredients

  • 1 lb baby potatoes
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried parsley
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp grated Parmesan cheese (optional)

Directions

Step 1

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or lightly grease it with olive oil.

Step 2

Bring a large pot of salted water to boil. Add the baby potatoes and cook them until they are fork-tender, about 15-20 minutes. Drain and let them cool slightly.

Step 3

Place the potatoes on the prepared baking sheet. Use the bottom of a glass, a potato masher, or a fork to gently smash each potato to about 1/2-inch thick, being careful not to break them apart completely.

Step 4

Drizzle the smashed potatoes with olive oil, ensuring each one is well coated.
