Preheat your oven to 400°F (200°C).
Wash the baby potatoes thoroughly and place them in a large pot. Cover them with cold water and add a generous pinch of salt.
Bring the pot of water to a boil and cook the potatoes until they are fork-tender, about 15 minutes.
While the potatoes are boiling, prepare the roasted garlic. Peel the garlic cloves, drizzle them with 1 tablespoon of olive oil, and wrap them tightly in aluminum foil. Roast in the preheated oven for about 15 minutes, or until they are soft and fragrant.
