Ingredients

  • 12 oz linguine pasta
  • 1 lb large shrimp (peeled and deveined)
  • 4 tbsp unsalted butter
  • 1 tbsp olive oil
  • 4 cloves garlic cloves (minced)
  • 0.5 cup fresh basil leaves (chopped)
  • 2 tbsp lemon juice (freshly squeezed)
  • 0.5 tsp red pepper flakes
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 cup parmesan cheese (optional, for topping)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the linguine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

Step 2

In a large skillet over medium heat, melt 2 tablespoons of butter with the olive oil.

Step 3

Add the minced garlic to the skillet and sauté for 1 minute until fragrant, being careful not to let it burn.

Step 4

Add the shrimp to the skillet in a single layer. Sprinkle with salt, black pepper, and red pepper flakes. Cook for 2-3 minutes on each side until the shrimp are pink and opaque. Remove the shrimp from the skillet and set aside.

Step 5

In the same skillet, add the remaining 2 tablespoons of butter. Stir in the freshly squeezed lemon juice and half of the chopped basil.

Step 6

Return the cooked linguine to the skillet and toss to coat in the basil garlic butter sauce. If the pasta seems dry, add reserved pasta water, 1/4 cup at a time, until desired consistency is reached.

Step 7

Add the cooked shrimp back to the skillet and gently toss to combine with the pasta and sauce.

Step 8

Remove the skillet from heat and stir in the remaining fresh basil.

Step 9

Serve the shrimp linguine hot, garnished with grated parmesan cheese if desired.
