Ingredients

  • 12 oz Penne pasta
  • 1 lb Large shrimp (peeled and deveined)
  • 2 tbsp Olive oil
  • 3 cloves Garlic (minced)
  • 4 cups Fresh baby spinach
  • 1 cup Heavy cream
  • 1 cup Grated Parmesan cheese
  • 2 tbsp Unsalted butter
  • 0.5 tsp Salt
  • 0.5 tsp Black pepper
  • 0.25 tsp Red pepper flakes (optional)
  • 1 tbsp Lemon juice (freshly squeezed)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the penne pasta according to the package instructions until al dente. Reserve 1 cup of pasta water and drain the rest. Set aside.

Step 2

While the pasta cooks, heat 1 tablespoon of olive oil in a large skillet over medium heat.

Step 3

Add the shrimp to the skillet and season with a pinch of salt and black pepper. Cook for 2-3 minutes on each side until pink and fully cooked. Remove the shrimp and set aside.

In the same skillet, add the remaining tablespoon of olive oil and the minced garlic. Cook for 1 minute until fragrant, being careful not to burn the garlic.

Add the fresh spinach to the skillet and sauté for 2-3 minutes until wilted.
