Directions

Step 1

Peel and dice the russet potatoes. Boil them in salted water for about 15 minutes or until fork-tender.

Step 2

Drain the potatoes and mash them with the butter, milk, 1 teaspoon of salt, and 0.5 teaspoon of pepper. Set aside and allow to cool slightly.

Step 3

Preheat your oven to 375°F (190°C). Grease a bundt pan or ring-shaped mold with cooking spray.

Add the diced carrot, onion, and garlic to the skillet. Cook until the vegetables are tender, about 5 minutes.

Step 6

Stir in the tomato paste, beef broth, Worcestershire sauce, and remaining 1 teaspoon of salt and 0.5 teaspoon of pepper. Cook for another 5 minutes, then stir in the peas. Remove from heat.

Step 7

Mix the mashed potatoes with the shredded cheddar cheese, breadcrumbs, and eggs until well combined.

Spread a thin layer of the potato mixture into the bottom of the prepared bundt pan, pressing it up the sides to create a shell.

Step 9

Spoon the meat mixture into the center of the ring, pressing gently to fill the space evenly.

Step 10

Cover the meat filling with the remaining potato mixture, smoothing it with a spatula to seal the top.

Step 11

Bake the potato ring in the preheated oven for 25-30 minutes, or until golden brown on top.
