Ingredients

  • 1 pound ground beef or lamb
  • 1 tablespoon olive oil
  • 1 large yellow onion, diced
  • 2 medium carrots, peeled and diced
  • 1 cup frozen peas
  • 2 cloves garlic cloves, minced
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 cup beef or chicken stock
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 4 large russet potatoes, peeled and quartered
  • 4 tablespoons butter
  • 0.5 cup milk
  • 0.5 cup shredded cheddar cheese (optional for topping)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Place the peeled and quartered potatoes in a large pot of salted water. Bring to a boil and cook until tender, about 15 minutes. Drain and set aside.

Step 3

While the potatoes are cooking, heat olive oil in a large skillet over medium heat. Add the diced onion and carrots, and sauté for 5-7 minutes, until softened.

Step 4

Add the ground beef or lamb to the skillet. Cook, breaking it up with a spoon, until browned and cooked through. Drain any excess fat, if necessary.

Step 5

Stir in the minced garlic, tomato paste, Worcestershire sauce, and beef or chicken stock. Cook for another 2-3 minutes, allowing the mixture to thicken slightly. Stir in the peas, salt, and black pepper.

Step 6

Mash the cooked potatoes with butter and milk until smooth and creamy. Season with salt and pepper to taste.

Step 7

Spread the meat and vegetable mixture evenly in a baking dish. Top with the mashed potatoes, spreading them out to cover the filling completely. Use a fork to create ridges on the surface for better browning.

Step 8

If desired, sprinkle shredded cheddar cheese over the mashed potatoes.

Step 9

Bake in the preheated oven for 20 minutes, or until the topping is golden and the filling is bubbling.

Step 10

Allow the Shepherd's Pie to cool for 5 minutes before serving. Enjoy your delicious, homemade comfort food!
