Ingredients

  • 2 tablespoons olive oil
  • 1 pound ground beef (or ground lamb)
  • 1 medium yellow onion, finely chopped
  • 2 medium carrots, finely diced
  • 1 cup frozen peas
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 cup beef or chicken broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 4 cups mashed potatoes (prepared, see notes)
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon paprika (optional, for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Heat a large skillet over medium heat and add the olive oil.

Step 3

Once the oil is hot, add the ground beef (or lamb) and cook until browned, breaking it up with a wooden spoon. Drain excess fat if needed.

Step 4

Add the chopped onion, carrots, and garlic to the skillet. Cook for 5-7 minutes until the vegetables are softened.

Step 5

Stir in the tomato paste, beef (or chicken) broth, Worcestershire sauce, and dried thyme. Season with salt and pepper. Simmer for 5 minutes to thicken the mixture slightly.

Step 6

Stir in the frozen peas and cook for an additional 2 minutes. Remove the skillet from heat.

Step 7

Transfer the meat and vegetable mixture to a 9x9-inch baking dish, spreading it out evenly.

Step 8

Spoon the mashed potatoes over the meat mixture in dollops, then spread them out evenly to cover the surface. Use a fork to create decorative ridges on the top.

Step 9

Drizzle the melted butter over the mashed potatoes, and if desired, sprinkle with paprika for garnish.

Step 10

Bake in the preheated oven for 20-25 minutes, or until the potatoes are golden brown and the filling is bubbling around the edges.

Step 11

Remove from the oven and let the Shepherd's Pie rest for 5 minutes before serving.
