Ingredients

  • 2 pieces Boneless, skinless chicken breasts
  • 4 medium Russet potatoes
  • 4 tablespoons Butter
  • 3 tablespoons All-purpose flour
  • 2 cups Chicken broth
  • 1.5 cups Milk
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 cups Shredded cheddar cheese
  • 0.5 cups Parmesan cheese
  • 2 tablespoons Fresh parsley (optional for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish lightly with butter or non-stick spray.

Step 2

Slice the russet potatoes into thin, even slices (about 1/8-inch thick) and set them aside.

Step 3

Trim and dice the chicken breasts into bite-sized pieces.

Step 4

In a large skillet over medium heat, melt the butter. Once melted, whisk in the flour to create a roux and cook for 1 minute, stirring constantly.

Slowly pour in the chicken broth, whisking continuously to prevent lumps. Add the milk and continue whisking until the mixture thickens, about 3-4 minutes.

Repeat the layering process with the remaining potatoes, chicken, and cheese sauce.

Sprinkle the remaining 0.5 cup of shredded cheddar cheese over the top of the casserole.

Cover the dish with aluminum foil and bake for 30 minutes. Remove the foil and bake uncovered for an additional 20 minutes, or until the potatoes are tender and the top is golden and bubbly.

Step 11

Remove the casserole from the oven and allow it to cool for 5-10 minutes. Optionally, garnish with fresh parsley before serving.
