  • 14.5 oz canned fire-roasted tomatoes
  • 0.5 medium yellow onion
  • 1 whole jalapeño
  • 2 whole garlic cloves
  • 0.5 cup fresh cilantro
  • 1 whole lime
  • 0.5 tsp cumin
  • 0.5 tsp salt
  • 0.5 tsp sugar

Directions

Step 1

Drain the canned diced tomatoes to remove excess liquid. Leave the fire-roasted tomatoes un-drained.

Step 2

Peel and roughly chop the onion and garlic.

Step 3

Remove the stem from the jalapeño, and for less heat, remove the seeds and membrane. For spicier salsa, leave them in.

Step 4

Add the drained diced tomatoes, fire-roasted tomatoes, onion, jalapeño, garlic, and fresh cilantro to a food processor or blender.

Step 5

Juice the lime and add the juice to the blender.

Step 6

Add the cumin, salt, and sugar for seasoning.

Pulse the mixture in the blender or food processor, using short bursts, until the salsa reaches your desired texture. For chunky salsa, pulse lightly; for smoother salsa, blend longer.
