Ingredients

  • 3 pounds beef chuck roast
  • 2 tablespoons olive oil
  • 1 large onion, sliced
  • 8 ounces sliced mushrooms
  • 2 cups beef broth
  • 1 packet dry onion soup mix
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 0 optional: salt and black pepper

Directions

Step 1

Pat the beef chuck roast dry with paper towels and season with salt and black pepper if desired.

Step 2

In a large skillet, heat olive oil over medium-high heat. Sear the roast on all sides until browned, about 3-4 minutes per side.

Step 3

Transfer the seared roast to the crock pot.

Step 4

Add sliced onions and mushrooms on top of the roast in the crock pot.

Step 5

In a mixing bowl, whisk together the beef broth and dry onion soup mix until combined, then pour the mixture over the roast in the crock pot.

Step 6

Set the crock pot to low and cook for 8 hours (or on high for 4-5 hours) until the roast is tender and falls apart easily with a fork.

Step 7

Once cooked, remove the roast from the crock pot and transfer to a serving platter. Cover with foil to keep warm.

Step 8

In a small bowl, mix cornstarch and water to create a slurry.

Step 9

Turn the crock pot to its high setting. Stir the cornstarch slurry into the liquid in the crock pot to thicken the gravy. Let it cook for 5-10 minutes, stirring occasionally, until the gravy reaches your desired consistency.

Step 10

Serve the roast with the onion mushroom gravy poured on top or on the side.
