Preheat your oven to 325°F (165°C).
Remove the turkey's giblets and neck from the cavity. Rinse the turkey thoroughly under cold water and pat it dry with paper towels.
In a small bowl, mix the butter with 1 teaspoon of salt, 1/2 teaspoon of black pepper, thyme, and sage. Rub this mixture under the skin and over the outside of the turkey.
In a large skillet over medium heat, heat the olive oil. Add the diced apples, celery, and onion. Sauté for 5-7 minutes until softened. Add the garlic and cook for another minute.
Remove the skillet from the heat and stir in the parsley, dried cranberries, and chicken broth. Add the cubed bread, mixing until the bread absorbs the liquid and the mixture is well combined.

Tie the turkey legs together with kitchen twine and tuck the wings under the bird.
Place the turkey breast-side up on a roasting rack inside a large roasting pan. Season the outside of the turkey with the remaining salt and pepper.
Roast the turkey in the preheated oven for approximately 3 hours, or until a meat thermometer inserted into the thickest part of the thigh reads 165°F (74°C). Baste the turkey every 30 minutes with the pan juices to keep it moist.
If the turkey browns too quickly, tent the bird loosely with aluminum foil.
