  • 1 cup Chicken stock
  • 1 can (14 oz) Tomatoes (diced)
  • 2 medium Potatoes (peeled and cubed)
  • 1 large Carrot (sliced)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh cilantro (chopped)
  • 4 cups Cooked jasmine rice (optional, for serving)

Directions

Step 1

Prepare the ingredients: Dice the onion, mince the garlic, and grate the ginger. Cube the potatoes and slice the carrot.
