Ingredients

  • 4 medium Cucumbers (preferably Kirby or Persian)
  • 1 cup White vinegar
  • 1 cup Water
  • 2 tablespoons Granulated sugar
  • 1 tablespoon Kosher salt
  • 2 medium (sliced thinly) Garlic cloves
  • 1 small bunch (about 1/4 cup) Fresh dill
  • 1 teaspoon Black peppercorns
  • 1 teaspoon Mustard seeds (optional)
  • 0.5 teaspoon Red pepper flakes (optional, for heat)

Directions

Step 1

Wash the cucumbers thoroughly and cut them into 1/4-inch thick slices.

Step 2

In a medium saucepan, combine white vinegar, water, granulated sugar, and kosher salt. Heat over medium heat, stirring, until the sugar and salt dissolve completely. Remove from heat and let the brine cool to room temperature.

Step 3

In a clean 32-ounce (1 quart) jar or two 16-ounce jars, layer the cucumber slices, garlic, fresh dill, black peppercorns, mustard seeds (if using), and red pepper flakes (if using).

Step 4

Pour the cooled brine over the cucumbers, ensuring they are fully submerged. Leave about 1/2 inch of space at the top of the jar.

Step 5

Seal the jar(s) with a lid and refrigerate for at least 24 hours. The flavor will improve the longer the pickles sit, but they are ready to enjoy after one day.

Step 6

Store in the refrigerator for up to 2 weeks. Serve as a tangy snack, a condiment for sandwiches, or a topping for burgers.
