  • 2 cups Water
  • 1 whole Bay leaf
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried oregano
  • 1 teaspoon Smoked paprika
  • 0.25 teaspoon Ground cayenne pepper
  • 1.5 teaspoons Salt
  • 1 teaspoon Black pepper
  • 6 cups Cooked white rice
  • 0.25 cup Green onions (sliced, for garnish)

Directions

Step 1

Rinse and sort the dried red kidney beans to remove any debris. Soak the beans in a large bowl of water overnight, or for at least 8 hours. Drain and rinse before using.

Slice the andouille sausage into 1/4-inch rounds.
