Ingredients

  • 180 grams All-purpose flour
  • 115 grams Unsalted butter (cold, cubed)
  • 3 tablespoons Cold water
  • 4 Large eggs
  • 240 milliliters Heavy cream
  • 120 grams Shredded cheese (cheddar, gruyere, or your choice)
  • 120 grams Cooked bacon (chopped) or vegetables (spinach, mushrooms, etc.)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large bowl, mix the all-purpose flour and salt. Add the cold, cubed butter and use a pastry cutter or your hands to blend until the mixture resembles coarse crumbs.

Step 3

Add cold water one tablespoon at a time, mixing gently until the dough comes together. Do not overwork the dough.

Step 4

Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 20 minutes.

Step 5

Roll the chilled dough out on a floured surface into a circle about 12 inches (30 cm) in diameter. Fit the dough into a 9-inch (23 cm) pie dish, trimming any excess around the edges. Prick the base with a fork to prevent bubbling.

Step 6

Blind bake the crust: Place a sheet of parchment paper over the crust and fill it with dry beans, rice, or pie weights. Bake for 10 minutes, then remove the weights and parchment. Bake for another 5 minutes, then let it cool slightly.

Step 7

In a medium bowl, whisk together the eggs, heavy cream, salt, and black pepper until fully combined.

Step 8

Sprinkle the shredded cheese evenly over the pre-baked crust. Add your choice of filling, such as cooked bacon or sautéed vegetables, spreading it evenly.

Step 9

Pour the egg mixture over the fillings, ensuring everything is evenly covered.

Step 10

Bake the quiche in the preheated oven for 35-40 minutes, or until the center is set and the top is golden brown.

Step 11

Allow the quiche to cool for 5-10 minutes before slicing. Serve warm or at room temperature and enjoy!
