Ingredients

  • 4 pieces Flour tortillas
  • 2 cups Shredded cheese (cheddar or Mexican blend)
  • 2 tablespoons Butter or cooking oil
  • 1 cup Cooked chicken, diced (optional)
  • 1 piece Bell pepper, diced (optional)
  • 1 small piece Onion, diced (optional)
  • 0.5 cup Salsa (for serving)
  • 0.5 cup Sour cream (for serving)

Directions

Step 1

Heat a large nonstick skillet over medium heat.

Step 2

Add 1/2 tablespoon of butter or a light drizzle of cooking oil to the skillet and let it melt and coat the bottom of the pan evenly.

Step 3

Place one flour tortilla flat in the skillet.

Step 4

Sprinkle 1/2 cup of shredded cheese evenly over half of the tortilla.

Step 5

If desired, add a layer of diced cooked chicken, bell peppers, and/or onions on top of the cheese.

Step 6

Fold the tortilla in half to create a semicircle, pressing gently with a spatula to help it stick together.

Step 7

Cook for 2-3 minutes on one side, or until the bottom is golden brown and crispy.

Step 8

Carefully flip the quesadilla and cook for an additional 2-3 minutes on the other side, until golden brown and the cheese is fully melted.

Step 9

Remove the quesadilla from the skillet and repeat the process with the remaining tortillas and fillings, adding more butter or oil to the skillet as needed.

Step 10

Cut each quesadilla into wedges and serve warm with salsa and sour cream on the side.
