Ingredients

  • 29 oz Pumpkin puree
  • 4 cups Chicken or vegetable broth
  • 1 cup Heavy cream
  • 1 medium Onion, diced
  • 3 large Garlic cloves, minced
  • 2 tablespoons Fresh sage leaves, finely chopped
  • 0.5 teaspoons Ground cinnamon
  • 0.25 teaspoons Ground nutmeg
  • 1 teaspoons Salt
  • 0.5 teaspoons Freshly ground black pepper
  • 1 tablespoon Olive oil
  • 0.25 cup Pumpkin seeds (optional, for garnish)

Directions

Step 1

Heat the olive oil in a small pan over medium heat and sauté the diced onion for 3-4 minutes until softened. Add the minced garlic and cook for another 1-2 minutes until fragrant. Remove from heat.

Step 2

In the crockpot, combine the pumpkin puree, sautéed onions and garlic, chicken or vegetable broth, chopped sage leaves, cinnamon, nutmeg, salt, and black pepper.

Step 3

Stir well to ensure all ingredients are evenly combined.

Set the crockpot to low heat and cook for 4-5 hours, stirring occasionally.

Step 5

Just before serving, use an immersion blender to puree the soup until smooth and creamy. If you don’t have an immersion blender, carefully transfer the soup to a countertop blender in batches and blend until smooth.

Step 6

Stir in the heavy cream and allow it to warm through for 10-15 minutes.

Step 7

Taste and adjust seasoning with additional salt or pepper if needed.
