Ingredients

  • 2 tablespoons olive oil
  • 1 medium, diced yellow onion
  • 3 cloves, minced garlic
  • 4 cups, peeled and cubed potatoes
  • 1 pound, trimmed and cut into 1-inch pieces asparagus
  • 6 cups vegetable broth
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 cup (optional for creaminess) milk or cream
  • 2 tablespoons, chopped (optional garnish) fresh parsley

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion and sauté for 4-5 minutes until softened and translucent.

Step 3

Stir in the minced garlic and cook for 1 minute until fragrant.

Step 4

Add the cubed potatoes and asparagus to the pot, then pour in the vegetable broth.

Step 5

Season with salt, black pepper, and dried thyme. Stir well to combine.

Step 6

Bring the soup to a boil, then reduce the heat to low and let it simmer for 20-25 minutes, or until the potatoes and asparagus are tender.

Step 7

Remove from heat. Use an immersion blender to puree the soup directly in the pot, or carefully transfer the soup to a blender and puree in batches. Blend until smooth or leave it slightly chunky, depending on your preference.

Step 8

If desired, stir in the milk or cream for added creaminess. Heat the soup gently over low heat, but do not let it boil.

Step 9

Taste and adjust the seasoning with more salt or pepper if needed.

Step 10

Serve hot, garnished with fresh parsley if desired.
