Total Time:40 mins
Servings: 6

Ingredients

  • 2 pounds Ground beef
  • 1 box (6 ounces) Stuffing mix (preferably herb-seasoned)
  • 1 cup Water
  • 2 large Eggs
  • 1 cup Ketchup
  • 2 tablespoons Brown sugar
  • 1 teaspoon Yellow mustard
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a muffin tin if using it for individual servings.

Step 2

In a large mixing bowl, combine the ground beef, stuffing mix, water, eggs, salt, and black pepper. Mix gently but thoroughly until all ingredients are well integrated.

Step 3

Divide the meat mixture evenly into 6 portions and shape each into a small loaf. Place the loaves onto the prepared baking sheet or press them into the wells of a muffin tin.

Step 4

In a small bowl, whisk together the ketchup, brown sugar, and mustard until smooth. This will be your glaze.

Step 5

Brush the glaze generously over the tops of each meatloaf.

Step 6

Bake in the preheated oven for 30 minutes, or until the internal temperature of the loaves reaches 160°F (71°C).

Step 7

Remove the meatloaves from the oven and allow them to rest for 5 minutes before serving.

Step 8

Serve hot with your choice of sides, such as mashed potatoes or steamed vegetables, and enjoy!
