Ingredients

  • 4 large Russet potatoes
  • 4 tablespoons Butter
  • 0.5 cup Milk
  • 2 teaspoons Salt
  • 1 teaspoon Ground black pepper
  • 2 tablespoons Olive oil
  • 1 pound Ground beef or lamb
  • 1 medium, diced Yellow onion
  • 2 cloves, minced Garlic
  • 2 medium, diced Carrots
  • 1 cup Frozen peas
  • 2 tablespoons Tomato paste
  • 1 tablespoon Worcestershire sauce
  • 0.5 cup Beef or chicken broth
  • 0.5 cup Shredded cheddar cheese (optional)
  • 1 teaspoon Paprika (optional, for garnish)

Directions

Step 1

Peel and dice the russet potatoes into chunks. Boil them in a large pot of salted water for 15-20 minutes, or until fork-tender.

Step 2

Drain the cooked potatoes and mash them with butter, milk, 1 teaspoon of salt, and 1/2 teaspoon of ground black pepper. Set aside.

Step 3

Preheat your oven to 400°F (200°C).

Step 4

Heat olive oil in a large skillet over medium heat. Add the ground beef or lamb and cook until browned, breaking it up with a spoon. Drain any excess fat.

Step 5

Add diced onion, garlic, and carrots to the skillet. Cook for 5-7 minutes, or until vegetables are softened.

Step 6

Stir in the tomato paste, Worcestershire sauce, 1 teaspoon of salt, and 1/2 teaspoon of pepper. Mix well.

Step 7

Pour in the beef or chicken broth. Allow the mixture to simmer for 5 minutes, stirring occasionally, until slightly thickened.

Step 8

Stir in the frozen peas and remove the skillet from heat.

Step 9

Transfer the meat and vegetable mixture to a baking dish (approximately 9x9 inches). Spread it out evenly.

Step 10

Spoon the mashed potatoes over the meat mixture, spreading it out evenly to cover the surface completely. Use a fork to create texture on top, if desired.

Step 11

Optional: Sprinkle shredded cheddar cheese over the mashed potatoes.

Step 12

Place the baking dish in the preheated oven and bake for 20 minutes, or until the top is golden and bubbling.

Step 13

Optional: Garnish with a sprinkle of paprika before serving.

Step 14

Let cool slightly before serving. Enjoy your Easy Peasy Shepherd's Pie!
