  • 2 pounds oxtail

  • 2 tablespoons tomato paste
  • 8 cups beef broth
  • 2 bay leaves
  • 4 fresh thyme sprigs
  • 2 medium potatoes, cubed
  • 2 tablespoons parsley, chopped (for garnish)

Directions

Step 1

Season the oxtail with salt and black pepper.

In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the oxtail and brown on all sides for 6-8 minutes. Remove and set aside.
