Ingredients

  • 8 large eggs
  • 0.5 cup milk
  • 6 slices bacon
  • 1 cup shredded cheddar cheese
  • 0.5 cup shredded mozzarella cheese
  • 1 small yellow onion
  • 2 cups baby spinach
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 0.5 teaspoon dried Italian seasoning

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a 9-inch round pie dish or baking dish with non-stick spray or a small amount of olive oil.

Step 2

Cook the bacon slices in a skillet over medium heat until crispy. Remove the bacon and place it on a paper towel-lined plate to soak up excess grease. Once cooled, crumble it into small pieces.

Step 3

In the same skillet, drain excess bacon grease, leaving about 1 teaspoon. Add the olive oil, followed by the finely diced onion. Sauté for 2-3 minutes until translucent.

Step 4

Add the baby spinach to the skillet and cook for another 1-2 minutes, stirring occasionally, until wilted. Remove from heat and set aside.

Step 5

In a large mixing bowl, whisk together the eggs, milk, salt, pepper, and dried Italian seasoning until well combined.

Step 6

Stir in the shredded cheddar cheese, mozzarella cheese, crumbled bacon, sautéed onions, and spinach, ensuring everything is evenly distributed.

Step 7

Pour the egg mixture into the prepared baking dish, spreading it out evenly with a spatula if needed.

Step 8

Bake in the preheated oven for 20-25 minutes, or until the center is just set and a toothpick inserted into the middle comes out clean.

Step 9

Remove from the oven and let the frittata cool for 5 minutes before slicing into wedges.

Step 10

Serve warm and enjoy!
