Ingredients

  • 2 whole oranges
  • 2 whole avocados
  • 0.25 whole red onion
  • 4 cups baby arugula
  • 3 tablespoons olive oil
  • 2 tablespoons fresh orange juice
  • 1 tablespoon white wine vinegar
  • 1 teaspoon honey
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons fresh cilantro

Directions

Step 1

Peel the oranges and remove as much of the white pith as possible. Slice each orange into thin rounds and set aside.

Step 2

Cut the avocados in half, remove the pits, and gently scoop out the flesh. Slice the avocado into thin wedges.

Thinly slice the red onion into slivers. If the flavor is too strong, soak the slices in cold water for 5 minutes, then drain and pat dry.
