  • 14.5 ounces canned diced tomatoes
  • 4 cups chicken broth
  • 2 cups green beans (frozen or fresh)
  • 1 teaspoon paprika
  • 0.5 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 whole bay leaf

Directions

Step 1

Peel and chop the onion and garlic cloves into small pieces.

Step 2

Wash and peel the carrots and potatoes. Slice the carrots into thin rounds and cut the potatoes into bite-sized cubes.

Step 3

Slice the smoked sausage into 1/2-inch pieces and set aside.

Step 4

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 5

Add the chopped onion and garlic to the pot. Sauté for 2-3 minutes until fragrant and slightly softened.

Stir in the sliced carrots, cubed potatoes, and sausage. Cook for another 3-4 minutes, stirring occasionally.

Step 7

Pour in the diced tomatoes (including their juices) and chicken broth. Stir to combine.

Step 8

Add the green beans, paprika, thyme, salt, pepper, and the bay leaf. Mix well.

Step 9

Cover the pot with a lid, reduce the heat to low, and simmer for 25-30 minutes, or until the potatoes and carrots are fork-tender.

Step 10

Remove the bay leaf and give the stew a final stir. Taste and adjust seasonings if needed.

Step 11

Ladle the eintopf into bowls and serve warm. Enjoy!
