Ingredients

  • 250 grams spaghetti or preferred pasta
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 200 grams button mushrooms, sliced
  • 100 grams black olives, pitted and sliced
  • 1 teaspoon red chili flakes
  • 1 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.25 teaspoon freshly ground black pepper
  • 50 grams grated Parmesan cheese (optional)
  • 2 tablespoons fresh parsley, chopped (optional)

Directions

Step 1

Bring a large pot of salted water to a boil and cook the pasta according to the package instructions until al dente. Reserve about 1/2 cup of pasta water, then drain the pasta and set aside.

Step 2

While the pasta is cooking, heat the olive oil in a large skillet over medium heat.

Add the minced garlic to the skillet and sauté for 1-2 minutes until fragrant, being careful not to burn it.

Add the sliced mushrooms to the skillet and cook for 5-7 minutes, stirring occasionally, until they release their moisture and start to brown.
