Ingredients

  • 1 cup Rolled oats
  • 1 cup Milk
  • 1 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 1 teaspoon Ground cinnamon
  • 1 large Egg
  • 0.5 cup Brown sugar
  • 0.25 cup Unsalted butter, melted
  • 1 teaspoon Vanilla extract
  • 0.5 cup Optional mix-ins (raisins, nuts, chocolate chips)

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease the tins.

Step 2

In a medium mixing bowl, combine the rolled oats and milk. Let them sit for 5 minutes so the oats can soften.

Step 3

In a separate large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon.

Step 4

After the oats have soaked, add the egg, brown sugar, melted butter, and vanilla extract to the oat mixture. Whisk until well combined.

Step 5

Pour the wet ingredients into the dry ingredients. Stir just until combined. Be careful not to overmix.

Step 6

If using any optional mix-ins like raisins, nuts, or chocolate chips, gently fold them into the batter.

Step 7

Evenly distribute the batter into the prepared muffin tin, filling each cup about three-quarters full.

Step 8

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 9

Remove the muffins from the oven and let them cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Serve warm or at room temperature. Enjoy!
