Ingredients

  • 4 pieces large eggs
  • 2 tablespoons milk
  • 1 tablespoon olive oil
  • 0.5 cup diced onion
  • 0.5 cup diced tomato
  • 0.5 cup diced green bell pepper
  • 2 tablespoons chopped fresh cilantro
  • 0.25 cup grated cheddar cheese
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 0.25 teaspoon ground cumin
  • 4 pieces tortillas (optional)

Directions

Step 1

In a medium bowl, crack the eggs and whisk them together with the milk, salt, black pepper, and ground cumin. Set aside.

Step 2

Heat the olive oil in a non-stick skillet over medium heat.

Step 3

Add the diced onion to the skillet and sauté for 2-3 minutes or until it becomes translucent.

Step 4

Add the diced tomato and diced green bell pepper to the skillet. Cook for another 2-3 minutes, stirring occasionally, until the vegetables are softened.

Step 5

Lower the heat to medium-low, then pour the egg mixture into the skillet over the sautéed vegetables.

Step 6

Using a spatula, gently stir the eggs continuously, scraping the bottom of the skillet to create soft, fluffy curds.

Step 7

Once the eggs are nearly set but still slightly runny, sprinkle the grated cheddar cheese and chopped cilantro over the top. Stir gently to combine.

Step 8

Remove the scrambled eggs from the heat while they are still slightly creamy, as they will continue to cook from residual heat.

Step 9

Serve immediately with warm tortillas on the side, if desired.
