Ingredients

  • 4 cups All-purpose flour
  • 3 tablespoons Granulated sugar
  • 2.25 teaspoons Instant yeast
  • 1 teaspoon Salt
  • 1 cup Whole milk
  • 5 tablespoons Unsalted butter
  • 1 unit Large egg
  • 0 Nonstick cooking spray
  • 2 tablespoons Optional melted butter for brushing

Directions

Step 1

In a large mixing bowl, combine 2 cups of the all-purpose flour, sugar, yeast, and salt. Mix well to combine.

Step 2

In a small saucepan, heat the milk and 3 tablespoons of butter over medium heat until the butter is melted and the mixture is warm but not hot (110-115°F).

Step 3

Add the warm milk mixture and the egg to the dry ingredients in the mixing bowl. Stir until well combined.

Step 4

Gradually add the remaining flour, 1/2 cup at a time, until a soft dough forms. The dough should pull away from the sides of the bowl but still be slightly sticky.

Step 5

Turn the dough out onto a lightly floured surface and knead for about 6-8 minutes, or until the dough is smooth and elastic.

Step 6

Place the dough in a large bowl lightly coated with nonstick cooking spray. Cover with plastic wrap or a kitchen towel and let it rise in a warm place until doubled in size, about 1-1.5 hours.

Step 7

Once the dough has risen, punch it down and divide it into 36 equal pieces. Shape each piece into a smooth ball by rolling it between your hands.

Step 8

Spray a 12-cup muffin tin with nonstick cooking spray. Place 3 dough balls into each muffin cup to create the cloverleaf shape.

Step 9

Cover the muffin tin with plastic wrap and allow the rolls to rise again in a warm place for 30-45 minutes, or until the dough has puffed and fills the cups.

Step 10

To make ahead: After shaping and placing in the muffin tin, cover tightly with plastic wrap and refrigerate overnight. Allow the rolls to come to room temperature and rise before baking.

Step 11

Preheat the oven to 375°F (190°C).

Step 12

Bake the rolls in the preheated oven for 12-15 minutes, or until golden brown on top.

Step 13

Remove the rolls from the muffin tin and brush with the remaining 2 tablespoons of melted butter, if desired.

Step 14

Serve warm and enjoy!
