  • 2 cups elbow macaroni

  • 0.5 cup red bell pepper, diced
  • 0.25 cup red onion, finely diced
  • 0.5 cup shredded carrots
  • 2 large hard-boiled eggs, chopped
  • 1 tablespoon fresh parsley, chopped (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the elbow macaroni and cook for 8-10 minutes, or until tender. Drain and rinse under cold water to cool completely.

Step 2

In a large mixing bowl, whisk together the mayonnaise, sour cream, white vinegar, sugar, yellow mustard, salt, and black pepper until smooth.
