  • 4 cups Low-sodium vegetable broth
  • 1 Bay leaf
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon (or to taste) Salt
  • 0.25 teaspoon (or to taste) Black pepper
  • 2 cups, fresh Baby spinach
  • 2 tablespoons, chopped Fresh parsley
  • 1 tablespoon (optional, for brightness) Lemon juice

Directions

Step 1
