Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 2 pieces garlic cloves, minced
  • 2 tablespoons fresh dill, chopped
  • 1 cup chicken broth
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon unsalted butter
  • 1 handful optional: fresh dill sprigs and lemon slices for garnish

Directions

Step 1

Pat the chicken breasts dry with a paper towel and season them on both sides with salt and black pepper.

Step 2

Heat the olive oil in a large skillet over medium heat. Once the oil is hot, add the chicken breasts.

Step 3

Cook the chicken for 5-6 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside on a plate.

Step 4

In the same skillet, reduce the heat to medium-low and add the minced garlic. Sauté for 1 minute until fragrant, being careful not to burn it.

Step 5

Deglaze the skillet by adding the chicken broth, scraping up any browned bits from the bottom with a wooden spoon.

Step 6

Stir in the lemon juice and lemon zest, then return the chicken breasts to the skillet. Spoon some of the sauce over the chicken.

Step 7

Reduce the heat to low, cover the skillet, and let the chicken simmer for 10 minutes.

Step 8

Uncover the skillet and stir in the butter and chopped fresh dill. Allow the butter to melt completely, creating a silky sauce.

Step 9

Taste the sauce and adjust seasoning with more salt or lemon juice if needed.

Step 10

Serve the chicken hot, spooning the lemon-dill sauce over the top. Optionally, garnish with additional fresh dill sprigs and lemon slices.
