Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 2 teaspoons Dijon mustard
  • 3 tablespoons lemon juice (freshly squeezed)
  • 1 teaspoon zest of a lemon
  • 0.5 teaspoon red pepper flakes
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 12 ounces spaghetti or linguine
  • 2 tablespoons parsley, chopped
  • 0.25 cup grated Parmesan cheese (optional)

Directions

Step 1

Bring a large pot of salted water to a boil and cook the spaghetti or linguine according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

Step 2

While the pasta is cooking, heat the olive oil and 1 tablespoon of butter in a large skillet over medium heat.

Step 3

Add the shrimp to the skillet in a single layer. Season with salt and black pepper. Cook for 2-3 minutes on one side, then flip and cook for another 2-3 minutes until the shrimp are pink and fully cooked. Remove the shrimp and set aside.

Step 4

In the same skillet, add the remaining tablespoon of butter. Stir in the minced garlic and cook for 30 seconds, until fragrant.

Step 5

Pour in the chicken broth, Dijon mustard, lemon juice, and lemon zest. Add the red pepper flakes. Stir well to combine and simmer for 2-3 minutes to reduce slightly.

Step 6

Return the shrimp to the skillet, tossing them to coat in the sauce. Add the cooked pasta to the skillet and toss to combine. If the sauce is too thick, add a splash of the reserved pasta water to loosen it.

Step 7

Sprinkle freshly chopped parsley over the pasta. Taste and adjust seasoning with additional salt, pepper, or lemon juice if needed.

Step 8

Serve immediately with a sprinkle of Parmesan cheese, if desired.
