Ingredients

  • 2 pieces Chicken breasts
  • 4 cups Fresh spinach
  • 2 pieces Garlic cloves
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Italian seasoning
  • 4 ounces Cream cheese
  • 1 cup Mozzarella cheese
  • 0.5 cup Parmesan cheese
  • 3 tablespoons Milk
  • 0.25 cup Bread crumbs

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease an 8x8-inch baking dish with non-stick cooking spray or olive oil.

Step 2

Season the chicken breasts with salt, black pepper, and Italian seasoning on both sides.

Step 3

Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chicken breasts and sear for 2-3 minutes on each side until golden brown (the chicken does not need to be fully cooked at this step). Remove from skillet and set aside.

Step 4

In the same skillet, add the remaining 1 tablespoon olive oil and sauté the minced garlic for about 1 minute until fragrant.

Add the fresh spinach to the skillet and cook for 2-3 minutes until wilted. Remove from heat and set aside.

Layer the wilted spinach over the cream cheese mixture.

Place the chicken breasts on top of the spinach layer.

Spread the remaining cream cheese mixture over the chicken breasts.

Sprinkle the remaining mozzarella cheese (1/2 cup), Parmesan cheese (1/4 cup), and bread crumbs evenly over the top.

Bake in the preheated oven for 25-30 minutes until the top is golden brown and the chicken is fully cooked (internal temperature should reach 165°F or 74°C).
