Ingredients

  • 225 grams dry rotini pasta
  • 150 grams salami, sliced into small strips

  • 1 red bell pepper, diced
  • 75 grams kalamata olives, pitted and halved
  • 0.5 red onion, thinly sliced
  • 50 grams parmesan cheese, grated
  • 60 ml olive oil
  • 30 ml red wine vinegar
  • 1 teaspoon dijon mustard
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the rotini pasta according to package instructions until al dente. Drain and rinse with cold water to stop the cooking process. Set aside.

Step 2

In a large mixing bowl, combine the cooked pasta, salami strips, cherry tomatoes, cucumber, red bell pepper, kalamata olives, and red onion.
