Ingredients

  • 500 grams Red chili peppers (Thai or Fresno)
  • 6 pieces Garlic cloves
  • 120 milliliters White vinegar
  • 50 grams Granulated sugar
  • 1.5 teaspoons Salt
  • 120 milliliters Water
  • 1 tablespoon Vegetable oil (optional, for consistency)

Directions

Step 1

Wash the red chili peppers thoroughly and remove the stems. For a less spicy sauce, you can remove the seeds inside the peppers.

Step 2

Peel the garlic cloves and set aside.

Step 3

In a blender, combine the chili peppers, garlic, white vinegar, granulated sugar, salt, and water. Blend until the mixture is smooth.

Step 4

Pour the blended mixture into a medium-sized saucepan and bring it to a gentle boil over medium heat.

Step 5

Reduce the heat to low and simmer the mixture for 15-20 minutes, stirring occasionally, until it thickens slightly.

Step 6

Allow the sauce to cool to room temperature.

Step 7

Strain the sauce through a fine mesh sieve into a clean bowl or jar, pressing with a spoon to extract as much liquid as possible. Discard any solids left in the sieve.

Step 8

For a smoother consistency, stir in vegetable oil at this stage (optional).

Step 9

Transfer the sauce into sterilized glass jars or bottles and store in the refrigerator for up to 1 month.
