  • 2 tablespoons Tomato paste
  • 0.5 cup Chicken broth (low sodium)
  • 2 teaspoons Italian seasoning
  • 0.5 teaspoon Crushed red pepper flakes (optional, for heat)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Capers (optional)
  • 2 tablespoons Fresh parsley, chopped (for garnish)
  • 4 cups Cooked pasta, rice, or zucchini noodles

Directions

Step 1

Place the chicken breasts in the bottom of the crockpot in a single layer.

Step 2

Add the bell peppers, onion, garlic, and mushrooms on top of the chicken.

Step 3

In a medium bowl, whisk together the diced tomatoes, tomato paste, chicken broth, Italian seasoning, crushed red pepper flakes (if using), salt, and black pepper. Pour this mixture over the chicken and vegetables in the crockpot.
